How to Wrap Cheese
No plastic, no tinfoil: Don’t suffocate your cheese.

I like limburger cheese. So, I must wrap it in about 4 bags and hide it in the refrig so my wife won't find it! If she does, there's a good chance it's history. Why? Because once I forgot that I had it and you can imagine the smell. haha.
Wax paper is the best. I work on food papers for a living, and this is correct. It allows air to pass through, but not moisture, so you retain the moisture inside with the cheese, but it can still breathe. Plastic and foil don't have any permeability and will trap all the air inside. These are better for freezing stuff, like keeping parmesan rinds for soups and stocks.

I agree about this being a sad video - not very helpful. To me, it looks like she wrapped it the way I gift wrap boxes. I just fold the stuff around the cheese and throw a rubberband around it to keep it in place...no fancy folding or tape required.-COLLAPSE

I know it sounds like a lot of work, but if you're paying a lot of money for some really great cheese, the work is worth it. Plastic wrap against cheese really does make cheese taste like plastic.
For hard cheese, you want to keep in the moisture, so you wrap the cheese in wax paper & plastic wrap, then an airtight container with a damp paper towel. (not a dry paper towel!)
But if you're storing the stinky washed-rind kind that I love, you need to let it breathe. With these cheeses, too, you don't want to soak up moisture. So one good way is to put it in an airtight container (a disposable one, like the kind that you might buy olives in) and punch holes in the top.-COLLAPSE

This tip is most puzzling. I've used plastic wrap forever to prevent cheese from drying out.
Occasionally I'll wrap a really moist cheese (say, feta) temporarily in a paper towel to draw out excessive surface moisture.
Old cheese/wine guy tip - remove cheese from refrigerator and wrapper an hour before serving. No wax paper!
Great. I can wrap cheese like that. But why? What's so bad about suffocating the cheese?
seriously. scotchtaping my cheese? and hand-cutting the paper down to size? i get the wax paper breathability tip, but this video was like a snl skit. i really wanted her to use a ruler and maybe throw out some air math equations for those pesky odd-shaped blocks.
The only thing that would take longer than wrapping the cheese the way she says would be unwrapping it. My gosh, it seems as if she packing the cheese for a two-week trip.
