How to Remove the Pin Bones from Fish

You’re unlikely to choke on a pin bone. But eating fish is a more pleasant experience if you aren’t encountering those small, soft bones in every bite. Even if you buy a filleted piece of fish, they’re likely to be there. We think our recipe for Cured Salmon is best if you remove the pin bones first.

  • To make the job easier, place an inverted bowl on your work surface; then drape the salmon, skin down over the bowl. the pin bones will pop up for easy tweezing.

  • Great tip Aida! I usually pull them after the fish is cooked but this works equally, if not, better. Keep cooking!

  • Heavy tweezers work well too. And wiggling the bone slightly as you pull will help loosen those more stubborn pin bones, though wiggling too much will definitely tear the flesh.
