JLM, how about seitan, which is made with wheat gluten? Field Roast is a really awesome brand. The "loaves" all contain ingredients that would be off limits to your SO but their sausages seem like they would work, and I personally think they're delicious.
I always wish I could eat vegetarian but my significant other is widely allergic to everything in the peanut family, which includes peas, chickpeas, soy beans and lentils and he is also lactose intolerant. Which effectively eliminates any source of protein that isn't a meat (to my knowledge anyway)
