what do you think of cooking a Porchetta on a Showtime Rotiserie...I know it's a schlocky gadget, but for those of us w/out a roti, it's the best we have.
This is the best cookbook I have purchased in some time. I think it is my current favorite and everything I have made out of it has been wonderful. Highly recommended despite its general lack of photos.
Gougeres is a good choice.
Make the roast chicken. Do it exactly as she says. That pre-salting technique is great and the bread salad thing is lovely with it.

I'm not sure about the idea of mock porchetta. Why not just have porchetta or something else all together?
