How to Chill a Bottle of Wine Quickly

A bottle of wine takes close to two hours to chill in the refrigerator. Sticking it in the freezer will speed things up, but this is rough treatment for delicate wines. To chill a bottle fast—15 minutes tops—place it up to its neck in a bucket of water and ice (plain ice alone doesn’t work as well). If you’re really in a hurry, add a small handful of salt to the ice-water bath; this lowers the temperature even more. Swirl the bottle every five minutes.
