How to Fry Latkes Without Smelling Up the Kitchen

The solution: Cook them outside on the gas grill. Make the latke mixture. Take two cast-iron pans and pour about 1/4 inch of oil into each pan. Put the pans on the grill and turn up the heat. When the temperature hits around 375ºF, drop mounds of latke mixture into the pans. Close the grill lid. When the undersides are golden brown (3 minutes), flip the latkes and close the grill again. When both sides are golden to dark brown (another 3 minutes), they’re ready.

  • That's a great option if you live in a climate that is moderate or have a nice covered grill area. For those of use who have to wade through the rain and/or snow and stand there letting the grill and the food get cold and soggy, not so much.

    Invest in a good exhaust hood for your kitchen instead.

  • I bought a turkey fryer just so I would have a high BTU outdoor burner. I did my latkes outside this year.
