The Greek flaming cheese dish known as saganaki is essentially no more than kasseri cheese, flamed and then doused with lots of lemon juice, says JungMann. It’s widely available as an appetizer at Greek restaurants, and it makes for a nice show in addition to being tasty.
Emphasizing the theatrical aspect of the dish, coney with everything notes that to be properly authentic, you must yell “OPA!” upon flaming the cheese. Then extinguish the flame with a lemon juice shower and serve it with a good bread: Greek if you can find it (not pita), otherwise good Italian or French bread will do.
And a final word about the cheese. “Whatever you do, don’t use feta or halloumi. Kam7185 says “it must be kasseri or, if you insist, kefalograviera.”
