Beyond the Black and Tan

Got a spoon and a lot of patience? The Washington Post presents a detailed look at the layered beer drink (or “beer parfait”) typified and popularized by the Guinness-and-Bass-based black and tan.

The author, Greg Kitsock, gets into the details of the alcohol-by-volume theory, the pouring implements (a crooked spoon or beer “brolly”), and the various beers best suited to playing the match game.

And like any good teacher, he wraps up his lesson with a call for excellence: “As you become more adept, try your hand at a ‘tiger tail,’ with a bottom layer of imperial stout propping up layers of pale ale and Guinness Draught.”
