A Knife by Any Other Name

Our new steak knives are not steak knives at all, but paring knives from L’Econome. I paid $8 (much cheaper than the $20 Lamson steak knives I also looked at) for each green, blue, red, and yellow knife from our local kitchenware store, Cooks Boulevard, and they work great. I don’t know what the etiquette of using paring knives is (can they be used for cheese?), but I’ll be tempted to pull these out for any knife-needing situation, proper or otherwise.
