“Golden chunks of spicy sweet goodness” says it all for this unassuming canister of crystallized ginger by the Ginger People. While most candied ginger on the market either leaves a bitter aftertaste or has an overly sweet and sugary gumdrop texture, the Ginger People have struck a perfect balance. The outer crust is just sweet enough, and the spiciness of the ginger really comes through. Half of the can was eaten before I got to try the ginger in my baking. I almost felt bad snacking so much, with that cute cartoon gingerperson smiling back at me from the can.

Ting Ting Jahe is not the same as crystallized ginger... it doesn't have the actual piece of ginger, fibers and all, and is certainly not strong enough for baking.

The process of converting ground barley, by cooking the mash for certain lengths of time at certain temperatures, changes the barley meal to a liquid, known as maltose. Well, there's wort in there somewhere...home brewers, chemists, and professional brewers will know the exact details (as well as malting specialists). This is in no way a corn syrup camouflaged as anything.

Used to love Ting Ting Jahe - hot & sweet. Then they pulled out a filling, and I'm back to the overpriced yuppie chews. The packaging's not as cool, but they have great ginger flavor & no corn syrup camouflaged as maltose.
I second the recommendation for Ting Ting Jahe. They are delicious and at 79 cents a pack, you can't beat the price. The local co-op had them repackaged under the Reed's Ginger label for more than twice the money.
