I would guess you put your fork down on your plate, and slip your wine glass out of the holder in order to drink?
But you still need two hands to drink, right? Tilting the entire plate backwards to sip, or sticking your tongue in the glass to lap up the wine seem a little declassé.
Finger foods, or strategically placed tables seem to be the best answer here.
