Many Chowhounds greatly anticipate the short season when Hatch green chiles are available, but whether you've put up a supply of the roasted New Mexican variety, or are using locally available poblanos or Anaheims, 'hounds say there are many delicious ways to use them: from topping cheeseburgers to enhancing stews and everyday omelets.
