BBQ R&D at Alchemy, Texas, Which Is Actually in Queens

Alchemy, Texas is a barbecue laboratory of sorts, opened a week ago at a Jackson Heights bar by the owner of John Brown Smokehouse, a Chowhound hangout in Long Island City. There's smokehouse history in the air here. The venue, Legends Bar, was the last site of Pearson's Texas BBQ (whose owner, Robert Pearson, introduced many New Yorkers to true Texas 'cue in the '90s) and also hosted its successor, Ranger Texas Barbecue, which closed this year.

As Legends' new pitmaster tenant explains, he sees Alchemy as "a place for doing experiments": The rotating lineup of meats might include goat, pork belly, or prime rib in addition to standards like brisket, pork ribs, and chicken.

Chowhound east elmhurst al, who dropped in during Alchemy's soft opening, sampled the ribs and skirt steak. "I was happy," he says. "Here's hoping it works out."
