This month Los Angeles hounds have been testing out the city’s greatest barbecue brisket spots, and Porthos was excited by the version at Rancho To Go BBQ in Orange. The shop— open only on Thursdays, Fridays, and Saturdays—slow-smokes its meats for 14 to 16 hours, resulting in moist and flavorful barbecue. In addition to the delicious and well-trimmed brisket, Porthos thought the smoked pulled pork was outstanding. The tender ribs and the chicken were also good, and even better when dipped in a bit of the shop’s sweet barbecue sauce. The true knockout, though, was the pastrami, brined for three days prior to smoking and “just superb stuff,” no sauce required. Mac 'n' cheese, baked beans, coleslaw, potato salad, and rolls are available to go along with the meat.
