New Spins on Basil Pesto

Many home cooks make traditional pesto with basil, garlic, pine nuts, and Parmesan, but Chowhounds who like to change things up recently shared their favorite twists on the classic. Several are partial to a Sicilian version called pesto alla Trapanese, which includes almonds, tomatoes, and Pecorino Romano cheese (just remember to toast the almonds and add a pinch of hot pepper, sea97horse says).

Pestos that combine basil with pistachios are popular—tiffeecanoe likes this one with cilantro and lemon zest. And katecm says using basil in place of mint in this version with tomatoes yields a fantastic sauce.

Finally, for a nut-free variation, todao combines one bunch of basil with 4 garlic cloves, 4 anchovies, 6 cherry tomatoes, 1/3 cup olive oil, some grated Fiore Sardo cheese and salt and pepper.
