Once available only in Texas, Ro-Tel canned tomatoes with chiles are showing up in markets all over the country. They’re a favorite of Chowhounds for adding a bit of zing to everyday cooking.

Several hounds cook sliced zucchini and onion in a can of Ro-Tel tomatoes until tender, then melt mozzarella or Monterey Jack cheese over the top. This is “[m]y idea of summer side-dish heaven,” tacosandbeer says.
