Karen Solomon, author of Can It, Bottle It, Smoke It: And Other Kitchen Projects, shows us that a few pennies' worth of ingredients, a blender, and some patience are all you need to make your own creamy rice milk or horchata.

  • I made this with my roommate's seemingly top-quality blender, and it pulverized the rice into such small pieces that a fine mesh strainer wouldn't strain them. I used a cheaper blender and had much better results.

  • This is a terrible recipe and not at all how you make rice milk. Even blending for two minutes you still end up with gritty product, and the ground up rice will sink to the bottom. You need to cook rice to make decent rice milk. Here is a much better rice milk video:

  • I just tried making some of this (the horchata) and I gotta say, the store-bought (liquid) version I typically buy is a lot more tasty. This recipe also has a weird chalky texture to it. Any way to improve on this? Would adding 1% or 2% milk make much of a difference? Thanks!

  • Hi THERESA LOWE. Here's the recipe:

    1 cup long-grain white rice
    4 cups water
    4 tablespoons sugar
    1 cinnamon stick (optional)

Soak the rice in water overnight or at least 8 hours.
Blend the rice and water on high for 2 full minutes.
While it's blending, add the sugar.
Strain through a fine-mesh strainer and serve.

Add a stick of cinnamon to the soaking and blending for horchata.

  • I can't hear what she is saying . Can I have the recipes please?

  • hey all! No need for refrigeration during the soaking process. Countertop is totally fine!

  • Do you let it stand at room temperature or in the fridge?

  • very excited to try this!

That's no good! We are investigating whether other people have seen this happen as well. It's not happening on our end reliably, which is how we can pass it along to engineering. Does it happen every time for you, or if you refresh, does it then play correctly? Which browser and operating system are you on?

  • Every time I try to follow a video that is posted on the FB page (or even directly from Chow's website), I get an error that says "The video you have requested is unavailable or may have expired. Here are some related videos that you may enjoy." FYI, the videos that it offers also do not work. HELP!
