I been making salad rolls: lettuce, cucumber, grated carrot, etc, rolled up like the Vietnamese summer rolls and served with either the same dip or peanut sauce. This was an appetizer at a popular Thai restaurant in Pasadena, CA, and I enjoyed being able to eat salad with my fingers!
