"When butchering, all of the bones, heart, liver, and head go into a pot of boiling water. After boiling this for several hours, the solids are removed, and the edible solids are ground. This is 'puddin' (PA Dutch), or Pan Haus. A scoop or two of the puddin is added back into the broth, along with salt, pepper, and corn meal. This is scrapple.
