Best is the amazing "pork oil" aka fresh lard I buy from Latino or International markets with good butcher sections. Stays fresh for a couple of months and makes EVERYTHING that fits in a sauté pan taste better. Fresh eggs over easy with some nice toast are a revelation.
My favorite, hands down, is bacon or sausage fat. If I haven't cooked bacon or sausage I usually go with butter. But the past few months I've started using a splash of olive oil in my hot iron skillet before I crack the egg. Mmmmmm good!

Cooked one this morning ,a sausage patty cooked over medium heat , and dropped 2 eggs right in ! bathed the eggs in the drippings ! Yum !
Instead of basteing with fat, add a splash of water, put a lid on the pan, and the steam will coagulate the white over the yolk, with a lot less calories!!!!
