"I have had great success serving a big cut-glass bowl of grapefruit segments, slightly sugared. People are used to having it on the half-shell and regard a bowl of pure grapefruit bites as something luxurious. It's a little tedious to segment six or eight grapefruit but you can put some good music on and just do it." – Querencia

"Make a soft polenta, pour a 1/2-inch-thick layer on a buttered ovenproof pan. Add some ragout, grated Parmesan, pieces of mozzarella or young cheese.
