  • All this talk of water & hot oil reminds me:

    One way to take the splatters away is to drop a piece of bread into the hot oil.

  • Some good ideas. Personally, I don't like any water around hot oil. Best bet is to bite the bullet and get a thermometer.

  • I sprinkle a little water off my fingers into the hot oil. If it sizzles it's ready.
