"True Buffalo wings are deep-fried naked (not even salt and pepper to season!), then doused in sauce. I make them this way all the time and I have no trouble getting the sauce to adhere. I usually throw them in the sauce straight out of the fryer and make sure they're thoroughly coated, then wait a couple of minutes and add a bit more sauce and toss again.
