Stove-Free Eggs

It's easy to cook eggs myriad ways on the stovetop, but what about the microwave or toaster oven in your office or dorm?

  • When I just want one fried egg, I use one of those individual plastic containers. I coat it with butter or vegetable oil spray, crack the egg into it, salt and pepper the egg, then cover it with a paper towel and nuke it for about thirty seconds. It comes out firm, flavored, and fast. I am a cheap date.

  • Eggs with shredded cheese, diced ham, minced onion & chopped leftover veggies baked as muffins in tins comes out really well. Mix whatever you like into beaten eggs, fill the cooking-sprayed cups to not-quite-full, and bake about 30 minutes at 375F. They're done when slightly browned and set. They keep nicely in the fridge or freezer and heat up quickly on school mornings.
