"One of our favorite quick tasty breakfast meals ... is to make a broken lightly fried egg and roll it up in a tortilla along with some grated panela, blanco, or any other interesting cheese, a little green like arugula, and slices of Hass avocado. The flavors meld so well. The avocado really gilds the lily in making it really smooth and creamy." – scubadoo97
"We use ground chicken and turkey frequently instead of ground beef. I'll cook it up with various spices and black beans and roll in tortillas, use in chili along with cubed steak (cuts a lot of fat and I like two different meat textures in my chili), and chicken burgers with rosemary, garlic, etc., are pretty darned good." – mojoeater
"I can't get enough of fried green tomatoes, but sometimes need to be a bit healthier, so will slice them and grill them. Grilled and then diced, they make a great addition to a grilled vegetable salad. Or, I'll serve the slices with some pepper Jack cheese melted on top (or sandwiched), with a dollop of tomatillo salsa." – katecm
