Tacos Vampiros

Ed Dibble reports on a new type of taco he’s seen around the U.S.-Mexico border in Arizona. They’re called tacos vampiros (or vampire tacos) because the tortilla is griddled until it’s dried out and crunchy, with a concave shape, looking something like a bat wing. The tortilla then gets filled with melting white cheese and carne asada, and topped with things such as guacamole and salsa.

Eat_Nopal has never encountered “vampire tacos” for sale in Mexico, but does recall grilling up leftover tortillas on camping trips to make tiesas, or “stiffs,” and spreading them with leftover salsa, beans, and what-have-you.
