IN THE SPIRIT OF THANKSGIVING I INVITED MY COUSIN AND HER NEIGHBOR FOR DINNER. THEY DIDN'T HAVE ANY WHERE TO GO AND I WAS HAPPY TO SHARE OUR TABLE WITH THEM. MY COUSINS FRIEND JOHN WAS AMAZED AT THE SPREAD AND SAID THIS WAS JUST LIKE HOME. WE WAS FROM THE SOUTH AND HADN'T HAD A HOME COOKED MEAL LIKE HOME IN A VERY LONG TIME. I WAS HONERED TO HAVE SUCH A COMPLIMENT.

Celery Root & Potato Mash
This is a great alternative to ordinary boring mashed potatoes. I had a celery root in the fridge with no intentions of anything to do with it except add it to a salad. When I decided to throw it into a pot of boiling potatoes. The end result was a very flavorful and interesting mashed potatoes. Since that accidental meal a couple weeks ago, we have had it two more times. Yum!

Cheesy Cauliflower
This recipe is soooooo easy; it adds very little to the holiday preparations. It can be assembled ahead of time, refrigerated and popped into the oven 15 minutes before calling everyone to the table. It will get raves from family and friends. Be prepared to share the recipe because you will get lots of requests.

Easy Barley with Mushrooms
This is easy comfort food at its best. It is a versatile side dish and can be made a vegetarian side or main dish by using vegetable stock and omitting the butter. We have had it every year at Thanksgiving and even our mushroom-haters enjoy it!

Roasted Sweet Potatoes
I wanted to make sweet potatoes with a twist. I found a roasted sweet potato salad recipe that used southwest flavors. Not quite what I was looking for, so I adapted it with more traditional spices, and omited the roasted red peppers, pumpkin seeds and cumin.This recipie is easy and has a little kick to it. It can be made ahead of time. I do it the day before, let it come to room temperature and then reheat it at the last minute.

Baked Lemon Sweet Potatoes
I have never seen the recipe for baked lemon sweet potatoes in any cookbook. It is easy and a great alternative to the usual way of fixing sweet potatoes.
When we were younger, we used to fight over the sugared lemon slices on top. Other children deserve the opportunity to eat this great food.
