Cranberry / Lemon Thyme Cookies
What does everyone say they need during the holidays? "Thyme." Well what better way to get it then in a yummy, crunchy, sweet, cookie. This tasty cookie with a hint of fresh herbs and a tart bite of cranberry will let you get back the "thyme" you need. Prepare the mix when you have the time. While its chilling - run those errands you need to, wrap those presents, write those cards. When you have used all your energy on others, take out that dough and finish the baking part. Boil some water for a nice cup of tea. Put your feet up and relax as your think about all the things you've accomplished. "Time" is all YOURS now.
Cranberry / Lemon Thyme Cookies
Prep Time: 20minutes
Cook Time: 10 minutes
Ingredients
2 1/2 cups flour
1 teaspoon cream of tartar
1 cup unsalted butter, softened
1 cup dries cranberries/Crasins
1 1/2 cups sugar
2 eggs
3 tablespoons fresh lemon thyme, finely chopped or .75 oz. dried lemon thyme
Directions
• Sift together flour and cream of tartar.
• Cream the butter with the sugar.
• Add the eggs and mix well.
• Blend in the flour until well incorporated.
• Stir in lemon thyme and dried cranberries.
• Chill for at least 2 hours.
• Roll into balls the size of small walnuts.
• Bake on greased cookie sheets
• Bake 10-12 minutes at 350°.
Edges may brown slightly.
