What Brings You Joy Around The Holidays?

Spiced Honey Loaf Cake

This recipe has a fabulous aroma, and the cake is perfect with coffee, tea, cocoa or milk! It's also appropriate both for Christmas, with its spices, and for Chanukkah, since it contains oil. The cake is easy to make, and absolutely delicious -- what more does anyone need around the holidays???

2 large eggs
1/4 cup smooth applesauce
1 cup brown sugar
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon ginger
1/4 cup light olive oil
1 cup honey
zest and juice of 1 large orange
1 cup brewed coffee, at room temperature
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 cup unbleached flour
1 cup whole wheat flour

Preheat oven to 325F. Grease an 8"x4" glass loaf pan.

In a large bowl, beat together eggs, applesauce, brown sugar, cinnamon, nutmeg, ginger, olive oil, honey, zest and juice fro orange, and coffee. Combine baking soda, baking powder, flour and whole wheat flour; mix into liquid ingredients until well blended.

Pour batter into prepared pan, and bake for 2 hour until a tester inserted into the center comes out clean.

Let cool completely, then slice.
