Easy Sweet Potato Smash
This dish brings everyone to the table and brightens up each plate with a punch of color and flavor. I serve this each year as a wonderful side and always take home an empty dish. This year at Thanksgiving my soldier husband and I treated several of the US ARMY's 88th soldiers to a thanksgiving feast and of course the Easy Sweet Potato Smash was a big hit. Everyone left happy and stuffed like a turkey! And of course we had a few Glade fall candles as door prizes, what military wife doesn't love a warm, inviting, wonderful aroma in their home for their hard working soldiers. Even if you the wives can't cook an Easy Sweet Potatoe Smash, at least it can smell like they can! That's probably how some of us wives found our husbands! They followed their noses right to our hearts! Love is in the air and on the table in Minnesota! So with out further anticipation and in hopes for future romances...here is the recipe for Easy Sweet Potatoe Smash!
2 pounds canned sweet potatoes
3 eggs, slightly beaten
1 tsp each, nutmeg, ginger, vanilla
1 1/2 tsp cinnamon
3 tbsp Evaporated milk
1 cup brown sugar
1/2 cup plain sugar
1 cup pecans
1 cup mini marshmallows
Preheat oven to 350'. Add all ingredients except marshmallows into a medium bowl and "smash" until slightly lumpy. Spread into a greased pan. Top with marshmallows. Bake in for 1 hour and 10 minutes and until marshmallows are browned and fluffy. Serve with a smile.
