Po' Man's Bibimbap (or Essentially Egg on Rice)
It's cultured (being Korean-ish) and it's easy, what more can you ask for? Your equally poor roomies will think you are being worldly and sophisticated, eating Korean cuisine like is KD (ie. Kraft Dinner for those who are not Canadian). And depending on your food budget this recipe is easily upgradeable in terms of adding meat and veggie fixings. This recipe is also university student approved, quick to make in a pinch (many nights after late classes, I've been able to make this effortlessly while sleep deprived).

Black Bean Soup with Rum Over Brown Rice
I. It's healthy. Lots of protein, vitamins from veggies, and fiber from the brown rice.
II. It's quick. By the time the rice is done, the soup should be done too.
III. It's delicious. Black beans and parmesan rinds have natural umami.
IV. It's versatile. It's a great way to use up leftover veggies from your fridge or freezer.
V. It's easy. I have all of these ingredients in my pantry or freezer right now.
VI. It's creative. I learned to add rum to my black beans from my cuban roommate in college. Great way to use alcohol in your cooking.

Moroccan Peanut and Tomato Soup
It's amazingly simple, and totally pantry - nothing to keep in fridge or freezer. It takes minutes, but tastes exotic and gourmet. Though it's my pantry meal (always have the cans and pb for it), I get asked to bring it to potlucks all the time by people greedy for more of it!
