A Knife by Any Other Name

Our new steak knives are not steak knives at all, but paring knives from L’Econome. I paid $8 (much cheaper than the $20 Lamson steak knives I also looked at) for each green, blue, red, and yellow knife from our local kitchenware store, Cooks Boulevard, and they work great. I don’t know what the etiquette of using paring knives is (can they be used for cheese?), but I’ll be tempted to pull these out for any knife-needing situation, proper or otherwise.

  1. I think the handles are too small. And the blades too dainty. Not that all steak knives MUST have ridiculously oversized handles and blades like a warrant officers cutlass, but I like something that can get a fist around and blade that has a nicely curved “bow” to handle ratio for making easy slices and being carefree around the bone.

    My personal favorite are the shorter utility knives from generic French sources or even those with plastic handles from Mundial, Forschner and Dexter Russell. These are generally the 6-7 inch “wide stiff boning knife” like this sample: http://www.bakedeco.com/detail.asp?id=9636&catid=166

  2. For my money the best deal is on Chicago Cutlery steak knives which are well-made and very reasonable. You can get them in various styles from cutleryandmore.com for about $5 per knife.

  3. Those sound like good deals on knives if you aren’t as attached to the French New Wave look, as I was. I was concerned about the size too, renov8r, but the knives I got were actually serrated, and they are very tough on meat. I love that they are small enough that they can be used in a variety of ways, and each guest gets a different color when we throw a dinner party.

  4. There’s no question that the L’Econome knives from France are fun. I use them as paring knives all the time. But for steak, I would want something heftier, and honestly most of this ilk look more traditional. We have a very contemporary home, and our dishes and stainless are quite modern, but nevertheless we use Case steak knives which are wonderful, but somewhat pricey. For the money and quaility, I still think that Chicago Cutlery is a pretty good deal.

  9. Admittedly Shun knives are wonderful. I have a Shun santuko which I love…but to spend about $75-80 per knife for Shun steak knives seems to me to be a bit over the top. I have had Case steak knives for many years, and they are terrific…and cost about $20-25 per knife. And, for more casual barbecues where I need more knives, I use Chicago Cutlery steak knives which are about $5-6 per knife and they are just fine. Can’t argue that Shun are probably the best knives made, but I wouldn’t trade my Acura for a Bentley even if I could afford to!

  12. Sorry! I have no argument with you that Shun knives are among the best. I love my Shun santoku. Since most of the prior posts were re steak knives, I assumed (incorrectly!) that you were talking about steak knives. Because of their cost, for me at least, Shun steak knives are a bit over the top.

  14. My personal favoriteSteak Knife Sets are the ones from Global. Global knives are firm in the hands and very strong. Shun santoku are ok but I am more comfortable with Global. They are a bit costly but well worth it.

    As long as chef knives are cared for properly they are long lasting.
